Citrus Fennel Salmon

Ingredients
- 2 oranges peeled, segmented
- 2 tablespoons of orange juice
- 1 small fennel bulb. Be sure to remove the stalks, core, and slice thin
- 2 tablespoons of fresh lemon juice
- 3 teaspoons of olive oil
- Himalayan salt to taste
- 4 skinless salmon fillets
Instructions
- Combine oranges, orange juice, fennel, lemon juice, himalayan salt and 1 teaspoon of olive oil
- Cook the salmon on the stove at a medium temperature with remaining two teaspoons of olive oil
- Be sure to turn occasionally
- Once the salmon is cooked thoroughly, top with the citrus mixture and serve
