Citrus Fennel Salmon

  • 2 oranges peeled, segmented
  • 2 tablespoons of orange juice
  • 1 small fennel bulb. Be sure to remove the stalks, core, and slice thin
  • 2 tablespoons of fresh lemon juice
  • 3 teaspoons of olive oil
  • Himalayan salt to taste
  • 4 skinless salmon fillets
  1. Combine oranges, orange juice, fennel, lemon juice, himalayan salt and 1 teaspoon of olive oil
  2. Cook the salmon on the stove at a medium temperature with remaining two teaspoons of olive oil
  3. Be sure to turn occasionally
  4. Once the salmon is cooked thoroughly, top with the citrus mixture and serve
