Fast Red Lentil Soup

Serves: 4
Ingredients
  • Saute’ a finely chopped onion in a little oil until soft
  • then add 1 cup (250g/8 oz) red lentils (wash first)
  • 13 ½ oz canned crushed tomatoes (with Basil is very good)
  • 4 cups of vegetable stock.
Instructions
  1. Bring to a boil; reduce the heat and simmer for 20 minutes, then stir in some chopped basil and serve topped with a small dollop of rice sour cream, if desired (great without it!).
