Ingredients
- 4 tomatoes, small to medium
- ½ cup sundried tomatoes
- ¼- ½ cup fresh basil or 2 teaspoons dried basil
- 1-2 tablespoons olive oil or flax seed oil
- 2 medjool dates
- 1 teaspoon garlic powder
- 1 teaspoon oregano
- 1 teaspoon sea salt
Instructions
- Place all ingredients in a blender in the order listed and puree until smooth and well blended. The longer you blend it, the less it will separate. Serve over zucchini pasta or a variety of sliced, seasonal vegetables and top with marinated mushrooms. Using a spiral veggie slicer, spiralize zucchini into spaghetti. You may also use a vegetable peeler to make linguini. Noodles.
