Rawk’n Creamy Corn Soup

Ingredients
- 3 ½ cups organic corn frozen or fresh off the cob divided, reserving ½ cup
- 3 cups pure water
- ½ cup raw cashews – soaked for at least an hour
- 3 scallions cut in one inch pieces
- ½-1 jalapeño, seeds and stems removed
- 2 tablespoons flax oil
- 1 ½ teaspoons sea salt
- 1 teaspoon garlic powder
- ½ teaspoons Whole pepper corns
- Garnishes
- ½ cup reserved corn
- 3 tablespoons cilantro, chopped
- 2 scallions, diced
Instructions
- Combine
- cups of corn with water, cashews, jalapeño, olive oil, garlic, salt and puree until smooth.
- Pour soup into bowls.
- Garnish with remaining corn, and cilantro and green
