Root Veggie Salad
Recipe Type: Power Snack, Dinner, Lunch
Serve with Pear Vinaigrette
- 4-6 cups Mixed salad greens – can include romaine, spinach, spring marugula,
- 1 beet, any variety
- 1 small sweet potato
- 1 small jicama
- 2-3 inches daikon radish
- 1 cup shredded Carrots
- 1 cup cherry tomatoes
- Add any other veggies you have on hand and enjoy!
- Place all ingredients in a large bowl and using tongs, mix well.
- Serve with Pear Vinaigrette Dressing. ~ Enjoy ~
