Root Veggie Salad

Serve with Pear Vinaigrette
Ingredients
  • 4-6 cups Mixed salad greens – can include romaine, spinach, spring marugula,
  • 1 beet, any variety
  • 1 small sweet potato
  • 1 small jicama
  • 2-3 inches daikon radish
  • 1 cup shredded Carrots
  • 1 cup cherry tomatoes
  • Add any other veggies you have on hand and enjoy!
Instructions
  1. Place all ingredients in a large bowl and using tongs, mix well.
  2. Serve with Pear Vinaigrette Dressing. ~ Enjoy ~
