Tortilla Soup

Ingredients
  • 1 tablespoon extra virgin olive oil
  • 1 med red onion, Diced
  • 1 Pablano pepper, diced
  • 2 cloves garlic minced
  • 6 oz can of chopped green chiles
  • 2 teaspoons oregano
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 6 oz can tomato paste
  • 1 15 oz can of diced tomatoes
  • 1 8 oz can tomato sauce
  • 4 cups vegetable stock
  • 1 15 oz can black beans
  • 2 cups fresh or frozen corn
  • 1/2 cup cilantro
  • Salt and pepper to taste
  • blue corn tortilla chips
Instructions
  1. If you make your own vegetable, strain and reserve the stock. Saute onion, pablano, green chiles, garlic in olive oil until tender. Add seasonings, stir in then, add diced tomatoes and paste and stir. add sauce, stock, beans, and corn. Check seasonings, add kelp or pepper. simmer for at least 30 minutes, add cilantro shortly before serving.
  2. *Serve with blue corn tortilla chips.
