Veggie Wraps
Recipe Type: Lunch Dinner

Ingredients
  • 3 Dates
  • 1 cup almonds
  • 1 package broccoli cold slaw
  • 2 pods garlic
  • ½ cup onion or green onions
  • Pinch of jalapeño
  • Handful of spinach leaves
  • Pinch of poultry seasoning – optional
  • Salt and pepper to taste (I eliminate salt)
  • Drizzle with olive oil
  • Butter leaf lettuce leaves
  • Guacamole
  • 1 small zucchini
  • ½ cup carrots
Instructions
  1. Put in food processor and hit pulse until coarsely ground:
  2. Dates
  3. cup almonds
  4. Transfer dates and almonds to a bowl
  5. Put the following ingredients in the food processor and hit pulse until coarsely ground: 1 package broccoli cold slaw
  6. pods garlic
  7. ½ cup onion or green onions
  8. Pinch of jalapeño
  9. Handful of spinach leaves
  10. small zucchini
  11. ½ cup carrots
  12. Mix both mixtures together and add:
  13. Pinch of poultry seasoning – optional
  14. Salt and pepper to taste (I eliminate salt)
  15. Drizzle with olive oil
  16. Mix well, then:
  17. Make wraps with butter leaf lettuce leaves
  18. Top vegetable mixture with guacamole
